One of my ALLTIME FAVORITE COMFORT FOODS IS DEEP DISH PIZZA! Pizza is one of my favorite foods and if I could, I would eat it every day! Perhaps after reading this book E2 I will create a mindset that will allow me to do just that and not gain weight!

INGREDIENTS

16 oz. Tomato sauce

2 ½ TBS tomato paste

1 teaspoon garlic (divided)

½ tsp red chili peppers

1 tsp oregano

1 small onion

8 oz sliced mushrooms

16 oz spicy sausage

16-20 pepperonis

1 TBS olive oil

Store bought (or make your own) pizza dough

2 Cups (or too your liking) Mozzarella cheese

s/p to taste

Spring form pan

DIRECTIONS

Preheat the oven to 400 degrees. To make the sauce, in a saucepan add the first 5 ingredients together and let simmer for 20 minutes while making the toppings. Next, add olive oil to pan and sauté onions for 3 or 4 minutes, then add mushrooms and sauté for another 5 minutes and then add the spicy sausage and cook until sausage is thoroughly cooked. About 12-15 minutes. Next, sauté the pepperoni until a bit crispy. They will crisp up more as they cool.

In a spring form pan, spray with non-stick oil then stretch the dough over and into the pan. This may require rolling out the dough a bit at first and patching the dough so that it goes up around all the sides evenly. Next add the mozzarella cheese, then the sausage and onion/mushroom mixture, then pepperoni. Last but not least, cover the pizza with the sauce.

Bake at 400 degrees for 25-30 minutes depending on how crispy you like your crust.
