If you are looking for something warm, filling and comforting on a cold night, look no further! This soup meets all the criteria for flavor, comfort and very satisfying. Serve with garlic bread.
INGREDIENTS
1 large onion
8 oz box white mushrooms
1 lb Italian (spicy) sausage
1 TBS Italian seasoning
3-4 cloves garlic
1 tsp Crushed red pepper
6 C chicken broth or bone broth
28 oz Chopped tomatoes
1 ½ C whole milk
4 oz cream cheese
½ C grated Parmesan cheese
20 oz tortellini
1 small container spinach
1 TBS olive oil
S/P to taste
DIRECTIONS
Heat large pot on stove, add and heat olive oil, then add onion. Saute 5 minutes, add mushrooms, sauté 5 minutes, add sausage and continue to break up the sausage while cooking approximately 8 minutes, add garlic, Italian seasoning and crushed red pepper. Continue cooking for a few more minutes.
Add chicken broth, chopped tomatoes and milk. Bring to a soft boil. Add cream cheese and parmesan cheese. Cook until melted thoroughly. Add tortellini and spinach, cook until tender. Add S/P throughout for seasoning to taste.
