INGREDIENTS
½ C each of Onion/Celery/Carrot
1 whole cabbage
1 pkg frozen kale
1 bag white kidney beans soaked over night
2 Can stewed tomatoes ~ skip this if you are following low iodine diet
1 32 oz container of beef broth ~ sub homemade vegetable broth if following low iodine diet * see below
16 oz sausage (optional)
3 cloves garlic
½ tsp thyme
½ tsp oregano
1 ½ tsp cumin
S/P to taste
Homemade vegetable broth
6 C water, add 1 onion, 4 carrots, 4 celery and salt. Light boil for 45 minutes, drain out veggies.2 C Rice, uncooked
DIRECTIONS
Saute onion, carrot, celery and garlic. Add seasons, s/p. Add about 1 ½ quart
liquid combo of beef broth, stewed tomatoes and water. (note: if low iodine
diet, just water and non-iodine salt. Add cabbage and beans. Bring to boil and
add kale. Optional: Saute sausage until cooked and add to stew
