All three of these salads are so refreshing, filling, well-balanced and healthy. Not only that, they are so easy to make and they stay fresher in these jars for longer. Easy to take to work, picnics, camping, a day on the river or at the lake, skiing, or simply just share with friends at your outdoor BBQ!
INGREDIENTS
Greek Salad~ Serves 2 Quart Jars
10 Cherry tomatoes
10 Kalamata Olives
½ C. sliced peperoncini peppers
½ C red onion
2/3 C diced cucumber
2/3 C feta cheese
3 C mixed greens of choice
Greek Salad Dressing
¼ C honey
¼ C olive oil
¼ C rice wine vinegar
S/P to taste
Taco Salad ~ Serves 4 Quart Jars
1 lb ground beef
1 pkg taco seasoning
1 can pinto or black beans-drained
1 red pepper
1 yellow pepper
1 small red onion
10 cherry tomatoes
1 C cheddar cheese
6 cups mixed greens of choice
Taco Salad Dressing
2/3 C salsa of choice
1/3 C sour cream
1 Tbs fresh chopped cilantro
Cobb Salad ~ Serves 2 Quart Jars
4 hard boiled eggs
10 cherry tomatoes
2/3 C diced cucumber
½ C red onion
4-5 slices of bacon (optional)
½ C blue cheese crumbles
3 C mixed greens of choice
Cobb Salad Dressing
Ranch Dressing
Salads in a jar ~ 8 Quart Mason Jars
DIRECTIONS
With each salad, put your hard vegetables in first, then the cheese and the mixed greens go in last. When ready to eat, turn upside down on a plate and add your dressing.
