A perfect, hearty and healthyish meal to celebrate the NCAA final four with this weekend!
INGREDIENTS
Salmon Patties
1 15 oz can of Wild Caught Salmon
½ C saltine crackers ~ crumbled
1 egg
2 TBS mayonnaise
4 green onions ~ diced
1 Tsp fresh dill ~ chopped
The Blend seasoning (salt, pepper, garlic)
1 TBS butter
1 lemon
Smashed Potatoes
12-15 new potatoes
1 stick of butter
1 tsp salt
The Blend seasoning
4-5 TBS Parmesan Cheese ~ grated
DIRECTIONS
Salmon Patties
In mixing bowl combine first 6 ingredients together. Make into 3-4 oz patties. Generously sprinkle the patties with “The Blend” on both sides. Melt butter in sauce pan on medium heat. Cook on medium heat for 4-5 minutes per side until golden brown.
Smashed Potatoes
Preheat oven to 450 degrees. In large pot, boil water add 1 tsp salt, boil potatoes until tender. Drain potatoes and put into mixing bowl. Add ½ stick melted butter and “The Blend” seasoning and toss. Add parchment paper to sheet pan. Spread potatoes out onto the parchment paper. Smash with a flat bottom surface glass. Add the other ½ stick on butter and more seasoning on top of potatoes. Bake at 450 for 7-10 minutes. Add Parmesan cheese and bake for another 5 minutes.
