St. Patrick's day commemorates Saint Patrick and the arrival of Christianity in Ireland and celebrates the heritage and culture of the Irish in general. What better way to celebrate than with a delicious Reuben Sandwich. While corned beef is not an Irish national dish, the connection with St. Patrick's Day specifically originates as part of an Irish-American culture.

INGREDIENTS
Russian Dressing
2 TBS Mayo – I prefer Japanese Mayo
2 TBS Sour Cream
2 TBS Horseradish
1 TBS Franks Red Hot Sauce
1 ½ TBS Ketchup
Splash of Worcestershire sauce
Sandwich Ingredients
Rye or marble rye bread
Corn beef
Swiss Cheese
Cold Slaw Recipe
1 pkg Shredded cold slaw
¼ C Mayo – I prefer Japanese Mayo
¼ C Sour Cream
2 TBS sugar
1 TBS Rice wine vinegar
2 TBS diced red onion
2 TBS chopped fresh parsley
1 TBS chopped fresh dill
1 tsp celery seed
Juice of 1 lemon
S/P generously to taste
DIRECTIONS
The day before or ahead of time, cook corn beef in crock pot or insta pot until
completely tender. If crock pot, cook in beer or broth for 8 hours. Corn beef is
already well seasoned, so doesn’t need a lot of extra seasoning.
OPTIONAL: Preheat oven to 450 degrees. Shred the corn beef and put in
oven for 10-15 minutes or so until some of the ends of corn beef get crispy.
In a medium bowl, mix all the Cold slaw ingredients together and then add the
shredded cold slaw to the mixture. Let marinade for an hour or so.
In a small bowl, mix all the Russian Dressing ingredients together.
Generously cover one side of each piece of bread with the Russian Dressing. Add
1 slice of swiss cheese to each side of the bread. If it doesn’t completely cover add
another ½ slice to each piece of bread. Add corn beef, top with cold slaw and top
with the other bread slice. Butter the top piece of bread and flip sandwich butter
side down into a medium heated pan. Cook until golden brown, butter other
piece of bread while butter side down is cooking. Flip and cook until other side is
golden brown. Serve immediately and devour!
