Tofu and green beans with peanut sauce

This simple meal is easy to make and tastes delicious! I usually have all of these ingredients on hand, so I can make this dish quickly for a healthy lunch or dinner. I did add Bragg’s aminos to the tofu, before adding the sauce, but I like it a little salty! For extra flavor you could add fresh garlic and/or ginger.



INGREDIENTS


1 pkg of Tofu ~ firm or extra firm

1 pkg frozen green beans

4 oz crushed peanuts

Green onion diced for topping ~ optional

1 TB sesame oil

1 TB Bragg’s amino acid


Peanut sauce

2 heaping TB of peanut or almond butter

2 TB Bragg’s amino acid (or soy sauce)

1 TB rice wine vinegar

1 TB garlic chili sauce

1 TB sesame oil

DIRECTIONS


Combine and blend all ingredients for the sauce and set aside.

Cube the Tofu, heat 1 TB sesame oil in the pan.

Add cubed tofu and don’t stir often.

Let the sides of the tofu get browned before turning.

Continue until tofu is browned on most sides.

Add 1 TB Bragg’s amino acid and stir.

Add green beans and peanut sauce.

Stir and heat until green beans are cooked and tender.

Top with crushed peanuts and green onion.

Serve and ENJOY!
